Why Chiapas & Oaxaca?

Chiapas sits at elevations between 1,200 and 1,800 meters, where cool mountain air slows the cherry's development and concentrates its sugars. The result: a cup with deep chocolate body, subtle citrus brightness, and a clean, lingering finish.

Oaxaca brings something different — a wildness. The indigenous Mixtec and Zapotec communities who cultivate here have farmed these volcanic soils for centuries. Their beans carry floral aromatics and a gentle earthiness that rounds out the blend with complexity you can't manufacture.

How to Brew It

Mexico single origin shines brightest as a pour-over or Chemex — methods that let its clarity and nuance come forward. Use water at 200°F, a medium-fine grind, and a 1:15 coffee-to-water ratio. Let the bloom breathe for 30 seconds. Then pour slowly. Deliberately.
